Seed bread pictureThis bread is gluten free and very yummy.

It is a savoury loaf, so great to serve with dips or to eat with eggs.
Because it is heavy, you won’t need much, but can store it in the fridge for up to a week.Seed loaf, gluten free with ingredients for healthy skin

The load is packed full of nutrient giving seeds such as sesame seeds that provide the skin with lots of vitamin E.

Psyllium husk gives a sense of fullness and is packed full of fibre. Psyllium can promote the growth of good gut bacteria such as Lactobacillus acidophilous and bifidobacteria which are helpful in regulating bowel movements. Meanwhile the chia seed provides vitamins, minerals and antioxidants. We also use coconut oil as coconut is known for its ability to boost immunity.

3 tablespoons of sunflower seeds

1 tablespoon chia seed

50 grams chopped almonds

150 grams ground almonds (meal)

3 tablespoons psyllium seed

2 tablespoons sesame seed

3 tablespoons coconut flour

1 teaspoon sodium bicarbonate

6 eggs

1 tablespoon apple cider vinegar

5 tablespoons coconut oil

1 teaspoon iodized salt

1 tablespoon dried onion

2 teaspoons dried oregano (or other herb of your choice)

To sprinkle on top

1 tablespoon chia seed

1 tablespoon sesame seeds

Pre heat your oven to 160 celcius. Line a loaf tin with baking paper or oil a loaf cooking tray.

Combine the dry ingredients and mix well.

Add the eggs, coconut oil, apple cider vinegar.

Add the mixture to the tin and spread evenly with a spatula. Sprinkle the chia and sesame seeds over the top.

Cook for 40 to 50 minutes until the loaf is firm and a skewer comes out clean.

Serve with other nutrient rich foods such as eggs, salmon or avocado.
